Japanese fried chicken with spicy mayo bao recipe

Today I’m sharing one of my go-to recipe of Japanese fried chicken stuffed inside a pillory fluffy white gar bao smothered in a spicy mayo sauce. Using staple Japanese ingredients that can be found at the Japan Centre or Asian supermarkets. Gar Bao is a Taiwanese street food favourite that can be filled with many different ingredients, the Japanese have their version. Using chicken thighs for juiciness finished off with a squeeze of lemon juice to sharpen the taste. You can pick up frozen ready-made baos from the Asian supermarket.

Japanese fried chicken with spicy mayo bao 

Ingredients 

2 large pieces of chicken thighs  

Potato starch as needed 

4 gar baos 

Iceberg lettuce as needed 

Lemon juice as needed 

Sauce marinade 

1 tbsp of soy sauce 

½ tbsp sake 

½ tbsp of mirin 

A pinch of salt 

Spicy mayo sauce 

50/50 ratio of siracha and Japanese kewpie mayonnaise  

 

Remove the skin and fat from the chicken, poke with a fork then cut into bite-size pieces 

Make the marinade and coat the chicken for 30 mins 

Start steaming your frozen baos for 30 mins 

Wrap chicken in paper towels and damp dry 

Wash and prepare your lettuce 

Start making the spicy mayo by the combine the two ingredients together and mix well 

Once it’s ready, heat the oil for deep frying. Just before you fry the chicken coat the chicken in potato starch. 

Fry until it’s cooked through usually about 10 minutes then place the chicken on paper towels to absorb oil.  

Take your steamed buns stuff with lettuce leaves, fried chicken pieces squeeze a bit of lemon and smother with the spicy mayo sauce.

  • 1 lemon
